Mash-Up Monday #4 Review & Recipe | Chicken: A Fresh Take on Classic Recipes by Marcus Bean

Hello everyone & happy Mash-Up Monday!

Hope things are swell as they say (who are they?) & uh.. yeah. Let's get started!

While I know how to cut up a chicken and understand the basics of soup and stock making and doing all the basic kitchen essential thing with chicken, a lot of people don't. And yeah, I'm not cool or anything (just paid a lot of money to learn how to do this in culinary school).
This is the main reason I love Chicken. It is THE essential chicken cookbook. For any beginner or non-beginner, Chicken provides step-by-step pictures for how to cut-up, truss and cook chicken.
What I also enjoyed is the variety of recipes provided. You have soups and sauces, stocks, appetizers containing chicken with cuisines varying internationally as well as entrees and salads.

&& here is the recipe I adapted from Chicken:


Chicken & Shrimp Dumplings with Soy Dipping 
Sauce

Ingredient List for dumpling filling:
1 cup ground chicken
9 ounces (roughly 1 1/2 cups) raw peeled tiger shrimp, finely chopped
1 teaspoon salt *Strongly recommend not to go over on the salt as we are also adding soy sauce which is high in sodium
1 teaspoon ground black pepper
1/4 cup finely chopped cilantro leaves (can be omitted if you are averse to cilantro)
3/4 cups water chestnuts, finely chopped
2 tablespoons soy sauce
2 tablespoons finely chopped scallions plus 1/4 cup thinly sliced scallions for garnish (optional)
1 tablespoon mirin
1 teaspoon sugar
2 teaspoons sesame oil
2 garlic cloves, minced
1 teaspoon powdered ginger
7 ounces wonton wrappers 

For the Soy Dipping Sauce:
1/4 cup light soy sauce
1/4 cup Chinese rice vinegar
4 teaspoons toasted sesame oil
2 tablespoons finely chopped cilantro leaves
1 clove of garlic, minced (optional)

Yield: Makes approximately 24-30 dumplings ; 4 servings


I know it looks like a lot of ingredients but it is SO worth it. I made the recipe initially for myself and ended up only making half and freezing the rest. When I defrosted the second half and made them for a get together I was having, everyone was wowed. This is a delicious recipe and might just be a staple of mine for future house gatherings.


You want to start off by mixing together all of the dumpling filling ingredients minus the chopped scallions for garnish and the wonton wrappers in a bowl. You want to make sure that all of the ingredients are well-incorporated.
You then want to cover this up and let it sit in your refrigerator for approximately 30 minutes. This is essential to maximize flavor in a 1-2 bite portion.


Once the 30 minutes have passed, you can take the filling out of the refrigerator and begin to line up your wonton wrappers and place approximately a teaspoon full of filling on to the center of each one.
I think I may have placed a bit more than that and was rewarded with approximately 24-30 dumplings.


To close the wrapper, simply bring up the ends on 2 opposite sides, and then repeat the same with the remaining corners of the wrapper. Honestly, you just want to make sure that the wonton wrapper is pressed up against the filling. 
Essentially, this is a "homemade" product so a bit of rustic-ness in the unevenness of the dumpling size is to be accepted (and appreciated)!



Repeat with the remaining wonton wrappers and you are ready to cook these bad boys.

The recipe recommends to steam the dumplings. To do this, you place a large pot of water on the stove and wait for it to come to a simmer with a steamer insert on the top. These then cook for 5-10 minutes until the filling is cooked through but still tender. If you are looking for a cooking temperature, you are looking for 165 degrees F.


For those of us without steamers:
I, unfortunately, do not have a steamer. Instead, I placed about 2 tablespoons of olive oil on the bottom of a medium saute pan under medium-high heat and waited for it to heat up.
As soon as it was hot enough (that means a sizzle when placing the wontons in), I placed the wontons in the pan and let them caramelize on the bottom which took approximately 1-2 minutes.
I then grabbed a 1/4 cup of water splashed it into the pan (making sure it did not fall inside any of the wontons but around them) and immediately covered the pan with a tight lid and decreased the heat to medium-low (more towards low).
5-8 minutes, you have seared and steamed wonton (however unconventional, it works).
Same with the steamed dumplings, you are looking for 165 degrees F.


Once cooked through, remove them off the heat, place on a pretty plate/platter and sprinkle with the remaining scallions you had thinly sliced.

For the Soy Dipping Sauce, simply place all of your ingredients into a bowl and whisk. :) Done!

Vacation Reads | August - September 2014

Hello everyone and happy Sunday!

I'm back from vacation & aside from suffering from some minor jet lag, I couldn't be more excited to get back in to the swing of things. I thought the best way to do this was to get caught up with all of the books I read while I was away so let's get started!

I obviously had time to kill and it kind of shows in the amount of books I read - 8, to be exact - and started 4 others. #dontjudgeme



Name: Reaver (Demonica #10; Lords of Deliverance #5)

I love this series. 10 books in and Larissa Ione nails it every single time. Reaver was probably my favorite book to date, filled with characters and a storyline that I have come to look forward to and enjoy reading, Reaver's story is the one that I have been looking forward to the longest. Between his memory loss, his dark attraction to Harvester and just the ongoing battle between heaven and hell that he is right in the middle of, I was sucked into this novel and didn't resurface until the last page was turned. And of course, now that I am caught-up with the whole series, I have to wait like the regular people for the release of the next book in the Demonica/Lords of Deliverance series, Revenant.

Do yourself a favor and pick up this series right NOW. :)

Name: Reflected In You (Crossfire #2)

Gideon and Eva's love and addiction to each other grow to new and dangerous territories in the second novel of the Crossfire series. Reflected in You made me want to yell and cry and laugh all throughout the novel. I seriously would have punched Gideon Cross in the face if he was in front of me. Or, you know, if he was real. Eva, too. 
The point is, this book made me feel things. It evoked strong emotional reactions in me that are usually reserved for a Paranormal novel. #dontjudgeme I am thoroughly enjoying this series and am wondering where the BDSM is, though. Is there supposed to be any? Was that just someone talking crap? I don't know. Either way, the BDSM is not needed and the love story here is what is keeping drawn here.

So maybe I went on a Crossfire binge. Not so spoiler alert? Reflected in You ends on a cliffhanger - a minorly predictable, crazy plot twist cliffhanger. Honestly, I can't talk about this. It's too fresh in my head and I don't want to give spoilers away because all I want to do is talk about it. Also, when the hell does the 4th book come out? UGH. Here is the blurb for the novel so I don't confuse you more than you already are:

Sometimes, blurbs are perfect. It doesn't happen often because usually blurbs are placed on the back cover (or inside cover) of novels to deceive you. What? It's true. In this case, the blurb does the book justice. If you dig it, buy it. This is one contemporary novel I adored and would consider rereading in the future.
Cath is a Simon Snow fan.

Okay, the whole world is a Simon Snow fan...

But for Cath, being a fan is her life—and she’s really good at it. She and her twin sister, Wren, ensconced themselves in the Simon Snow series when they were just kids; it’s what got them through their mother leaving.

Reading. Rereading. Hanging out in Simon Snow forums, writing Simon Snow fan fiction, dressing up like the characters for every movie premiere.

Cath’s sister has mostly grown away from fandom, but Cath can’t let go. She doesn’t want to.

Now that they’re going to college, Wren has told Cath she doesn’t want to be roommates. Cath is on her own, completely outside of her comfort zone. She’s got a surly roommate with a charming, always-around boyfriend, a fiction-writing professor who thinks fan fiction is the end of the civilized world, a handsome classmate who only wants to talk about words... And she can’t stop worrying about her dad, who’s loving and fragile and has never really been alone.

For Cath, the question is: Can she do this?

Can she make it without Wren holding her hand? Is she ready to start living her own life? Writing her own stories?

And does she even want to move on if it means leaving Simon Snow behind?
I would get so frustrated with Cath at times that I had to close the novel and let it sit (just for 5 minutes, though) and then return to the reading. I expected to like this novel but I ended up loving it. Definitely recommend.

Name: Third Grave Dead Ahead (Charley Davidson #3)

One of my top series of not just 2014 but of all time. What is it about Charley Davidson? Her sarcasm, maybe. I don't know. But I've been listening to all of these books via audible while either working, driving or cleaning. During vacation, it was while sitting through a long car ride.
Have you read any books in this series? Because you need to. Charley Davidson is what we like to call the Grim Reaper and also a private investigator. She gets into some serious trouble (all the time) both with ghosts and humans of the live variety. And there is also this deliciously sexy and in-love-with-her son of Satan names Reyes who ya know, gets things pretty hot and heavy on the regular.
Just read this series. You'll thank me later.

If you read my "review" of the above novel, then I'm just not going to mention my complete adoration of this series. But just might actually give you a brief overview of this fourth installment of the Charley Davidson series.
In Fourth Grave Beneath My Feet, Charley is just getting over her latest near-death experience and has actually become a recluse and let fear consume her at the beginning of the novel. Thankfully, she has a new case to focus on and forces herself out of her apartment (with the help of a few friends and family members).
Like every other novel in the series, Fourth Grave Dead Ahead promises drama, romance, comedy and paranormal goodness.

Name: Night's Honor (Elder Races #7)

I have a review coming soon with this one. While it wasn't my favorite novel in the Elder Races series, it was still a great read.

I don't think it is necessary to read this one in order to follow along with what is going on with the series but still worth the read. I enjoyed the story line and Xavier is total stud material.

Mash-Up Monday #3 | Let Us All Eat Cake: Gluten-Free Recipes for Everyone's Favorite Cakes

Hello & happy Monday!

While Mondays are not usually my favorites (especially after coming back from a 2 week vacation), I sincerely look forward to these mash-up Monday posts. This week, especially, lifts my mood because my Monday is a bit sweeter with this particular book review and recipe.

If you have been following me for a while, you will know that I'm a sucker for most things gluten-free or dairy free - really, anything I can see that will be a benefit for me health-wise without damaging quality and overall flavor. So, naturally, when I saw this book on Netgalley I had to request it. I was dying to test out a recipe find some alternative preparations for classic recipes.
Per usual, my mash-up Monday reviews are short and to the point. Let Us All Eat Cake is fantastic recipe book -whether you are gluten intolerant or otherwise - and will soon be a staple in my kitchen.

&& here is the recipe I adapted from Let Us All Eat Cake:


Flourless Chocolate Torte Recipe


Ingredient List:
1 1/4 cup dark chocolate chips
3/4 cup melted and cooled virgin coconut oil OR unsalted butter (1 1/2 sticks)
1 cup organic cane sugar
3/4 cup natural (nonalkalized) cocoa powder
4 eggs at room temperature
2 tsp vanilla extract
1 tsp fine sea salt (optional)

Yield: Makes (1) 8 inch-diameter cake ; 12-14 servings





Preheat the oven to 300 degrees F & grease an 8-inch-diameter cake pan with either cooking spray or coconut oil. *I didn't have a round cake pan available (long story) so I used a 9 x 13 cake pan instead and this worked out, well.



If you do not have a double-boiler, you can create one by placing a few inches of water into a small saucepan or saucepot and then placing a stainless steal bowl over top. The trick here is to not have the top bowl touching the water in the bottom pot. You just want a bit of water in the pot to simply create steam and slowly (and evenly) cook/melt the ingredients in the bowl. I used the bottom of a tea pot :)



With the water simmering (over medium-low heat), add the chocolate chips and the coconut oil into the stainless bowl and gently stir the ingredients together until the chocolate has completely melted. As soon as it is all melted and incorporated into the coconut oil, remove the bowl from the heat (carefully, as it will be hot) and let cool for approximately 5 minutes.



Then you want to add the sugar and cocoa powder and mix until there are no lumps and everything is well-combined. Then add the eggs and vanilla and whisk until just incorporated. DO NOT OVERMIX. At this point, I also add the teaspoon of salt. It is not called for in the original recipe but I find that adding just a dash of salt into most any sweet recipe really brings out all the flavors.



Once mixed, you can pour the batter into your greased cake pan and place in the oven for 40-50 minutes. In my 9x13 cake pan, 40 minutes was the perfect amount of time. When you remove the pan from the oven, the batter might still look wet/loose but it will set after approximately 30 minutes. The authors also recommended not to use the toothpick test to test if the cake is ready.



While there is a berry puree recipe that coincides with the chocolate torte one, I prefer a sprinkle of powdered sugar and some fresh berries with this flourless chocolate torte - yum!
